My Vegan Vegetable Soup
So I decided to make some soup the other night, I basically used what ever I had in the fridge and threw it all in a pot, but Ill run down what I used. It actually came out as good as it looks, I was pretty impressed! So I started by putting some black eyed peas in a bowl with water to soak, while they were soaking I started copping up a bunch of veggies, celery, carrots, onion, red bell pepers, and garlic. After I finished copping those I put everything into a very large cast iron pan (with a little bit of olive oil) and sautéed them for a while. I also added some frozen peas and spinach to that and let it cook for about 15 min on high.
After that cooked for a little bit I put everything into a large pot and added the black eyed peas too. I then added a large can of diced tomatos and topped the rest of the pot off with water and about 2 tablespoons of Better Than Bouillon and let it cook for about 20 – 30 min and your done!
You can add spices to your taste the lady added a bunch of stuff while I wasn’t looking so I am not really sure what went in after that.
Ingredients (amonts are approximate & all veggies are organic as well)
- 2 celery hearts
- 10 medium carrots
- 1 large white onion
- 2 red bell peppers
- 5 cloves of garlic
- 1 28oz can of diced tomatoes
- 1.5 cups of black eyed peas
- 1.5 cups of peas
- 2 cups of chopped spinach
- 2 big tablespoons of Better Than Bouillon
- and spices to your taste! (if i find out what went in Ill update)
